  • Pastry dough

  • 3 zucchini
  • 1 white onion
  • 1 small garlic clove
  • Basil leaves or other herbs for seasoning
  • 2 tablespoons olive oil

  • 8-9 ounces (250g) of Brousse or Ricotta cheese
  • 1 tablespoon of cream
  • 1 tablespoon flour
  • Salt, pepper


  • One 11 inch (28cm) tart pan
  • 1 skillet
  • 1 bowl


  1. Prepare the pastry dough and set aside
  2. Fit the pastry dough into the pie plate and pre-bake for 5 to 6 minutes until lightly browned.
  3. In a skillet, sauté the chopped onion in oil for 5 minutes over low heat, then add the diced zucchini, crushed garlic and herbs. Cook 8 to10 minutes, stirring occasionally
  4. Preheat oven to 350°F (180°C)
  5. In a bowl, mix the bush, cream and flour. Salt and pepper as desired. Add the onion-zucchini mixture to the bowl, then add everything to the pie plate and bake about 25 minutes at 350°F.

Zucchini quiche and Provencal bush... Serve with green salad
