  • 1 oven safe baking dish


Preparation

  1. Preheat oven to 400°F (200°C).
  2. Mince the onions, cut the tomatoes into pieces and slice the lemon

  3. Spread the minced onions and half of the tomatoes over the bottom of an oven proof baking dish.
  4. Place the fish fillets on top. Season with salt and pepper.
  5. Top with the remaining tomatoes and lemon slices. Add the bouquet garni and crushed garlic. Drizzle with white wine and olive oil.

  6. Cook for 10 minutes at 400°F (200°C) then reduce temperature and cook for another 20 minutes.
  7. Sprinkle with chopped parsley before serving.
