  • Pie crust for quiche:
  • 1 and a half cups (200 g) flour
  • 1/2 cup (100 g) butter
  • 1 pinch of salt

  • Béchamel Sauce
  • 1/4 cup (30 g) flour
  • 1/8 cup (30 g) butter
  • 1 cup (1/4 liter) of milk

  • 5 ounces (150 g) Roquefort
  • 1 egg


  • 1 pot or saucepan
  • 1 pie tin


  1. Prepare the pie crust and let rest at least 20 minutes.

  2. Make a classic Béchamel sauce or make the sauce in the microwave. Then remove the sauce from heat, add the egg and mix in the crumbled Roquefort

  3. Line a pastry tin with the pie crust and fill with the sauce mixture.
  4. Bake in the oven at 415°F (210°C) for 25 minutes.
