  • 1 garlic press


  1. Wash and cut the tomatoes in half horizontally. Remove the seeds and lay them cut side up to allow them to retain some of their liquid.
  2. Mince the garlic and mix with the chopped parsley.
  3. Arrange the tomatoes in a pan with a little oil and cover with the chopped parsley and garlic. Sprinkle with breadcrumbs. Salt and pepper as desired.
  4. Cook over low heat for about 45 minutes. Monitor the cooking and add a little water to the pan if necessary.

Final Thoughts...

  • Served with green beans these go great with grilled meats!
