Ingredients

  • 6 egg yolks
  • 2 cups (500ml) of heavy cream
  • 1/4 cup (50g) sugar
  • 1 vanilla pod
  • 6 tablespoons brown sugar to caramelize

Cookware

  • 1 pot
  • 1 bowl
  • 1 colander
  • 1 large dish for to place the ramekins in for the water bath
  • 6 ramekins or one large dish
  • 1 kitchen torch

Preparation

  1. Preheat oven to 325°F (160°C). In a saucepan, heat 2 cups (500ml) of cream and add the vanilla seeds, obtained by scraping the vanilla pod with a knife, and bring to a boil


  2. In a small bowl, mix the 6 egg yolks and 1/4 cup (50g) of sugar

    Once the cream begins to boil, pour the cream over the mixture while whisking

    Filter

    Fill 6 ramekins and place them in a water bath

    Bake 25 minutes

  3. Let cool then refrigerate for 4 hours

  4. Right before serving, sprinkle each ramekin with brown sugar and caramelize with a kitchen torch. Wait 1 minute and serve



  5. Variation: you can also serve the crème brulée "family style"






Final Thoughts...


This is an easy recipe to make and looks great on the table!
To prepare in advance, just prepare the cream 4 hours ahead of time and refrigerate until serving. You can even prepare it the day before, giving you more time the next day...

Reduce kitchen waste: keep the egg whites in the refrigerator in a closed container for another use. For example, I suggest:
German cake, almond cake, old fashioned marzipan macarons, meringues, financiers, amaretti, tulip shells, Pithivier cake made with almond paste...
