  • 1 Dutch oven (ovenproof)


Preparation

  1. Peel the onions. Cut into thin slices by hand or, even easier, use a mandolin slicer or a food processor

  2. In a Dutch oven (ovenproof), slowly sauté the onions in the butter. Sprinkle with flour and stir with a wooden spoon until the onions start to lightly brown. Add the water, salt and pepper

  3. Bring to a boil and then simmer for about 20 minutes.

  4. Lightly toast the bread slices in the oven using the broiler

  5. Place the toasted slices on top of the soup and sprinkle with grated cheese

  6. Broil again for a few minutes to melt the cheese

  7. Serve hot.

Final Thoughts...

  • To avoid crying while cutting the onions, you can put them in a plastic bag while cutting to protect your eyes!
    Do not let the onions burn, otherwise the soup will have a pungent and bitter taste!
