Preparation

  1. In a saucepan, stir the butter and flour together over low heat until the mixture is foamy and bubbling
  2. Add the milk all at once
  3. Salt and pepper
  4. Bring to a boil and whisk until thickened
  5. Let simmer for a few minutes
  6. Add the pinch of nutmeg and stir.

Final Thoughts...

  • NOTE:
    For a thick béchamel sauce (to garnish crepes, for example), use 1 cup (1/4 liter) milk instead of 2 cups
