- 5 cups (750g) green beans
- 3 eggs
- 1 garlic clove
- Parsley sprigs

Preparation
- Remove the stems from the green beans and wash them. Cook in a large pot of salted boiling water for 20 to 25 minutes then drain
- Meanwhile, cook the eggs for about 10 minutes in another pot of water and peel them
- Prepare the vinaigrette in a bowl
- Add the chopped boiled eggs
and the green beans. Mix, adjusting the seasoning as needed. Crush the garlic clove and add to the mixture then garnish with finely chopped parsley.
