Ingredients
- 4 large tomatoes
- 4 garlic cloves
- 1 handful of parsley
- Salt, pepper
- 2 tablespoons breadcrumbs

- Wash and cut the tomatoes in half horizontally. Remove the seeds and lay them cut side up to allow them to retain some of their liquid.
- Mince the garlic and mix with the chopped parsley.
- Arrange the tomatoes in a pan with a little oil and cover with the chopped parsley and garlic. Sprinkle with breadcrumbs. Salt and pepper as desired.
- Cook over low heat for about 45 minutes. Monitor the cooking and add a little water to the pan if necessary.

Served with green beans these go great with grilled meats!
