4 large slices of sandwich or sourdough bread (about 140g)
2 tablespoons (25g) butter at room temperature
4 slices Emmental or Swiss cheese (4oz/120g)

Preparation
Take the butter out of the refrigerator a little in advance so that it is not too hard, then spread it moderately on one side of the bread slices (the outer sides will be grilled)
Cut the cheese and the ham into slices about the size of a slice of bread
Place one slice of cheese on the non-buttered side of the bread. Top with one slice of ham. Add another slice of cheese and finish by placing the second slice of bread on top of the cheese (non-buttered side touching the cheese)
Prepare the other croque monsieur using the same directions.
Put the croques monsieurs under the broiler for 2-3 minutes, paying attention to the coloring since they will brown quickly, then repeat on the other side.
