Ingredients
- 5 fish fillets, such as whiting (about 1.5lbs/650g)
- 2 onions
- 5 tomatoes
- 1 lemon
- 2 garlic cloves
- 1 glass of white wine (5oz/150 ml)
- 2 tablespoons olive oil
- Salt, pepper
- Bouquet garni
- Parsley

Preparation
- Preheat oven to 400°F (200°C).
- Mince the onions, cut the tomatoes into pieces and slice the lemon
- Spread the minced onions and half of the tomatoes over the bottom of an oven proof baking dish.
- Place the fish fillets on top. Season with salt and pepper.
- Top with the remaining tomatoes and lemon slices. Add the bouquet garni and crushed garlic. Drizzle with white wine and olive oil.
- Cook for 10 minutes at 400°F (200°C) then reduce temperature and cook for another 20 minutes.
- Sprinkle with chopped parsley before serving.
