Preparation
Peel the potatoes, then wash, pat dry and cut them into thin slices. Heat the olive oil in a pan and sauté the potatoes.
Meanwhile, crack the eggs into a bowl and beat them together. Season with salt and pepper.
Once the potatoes are cooked, pour the beaten eggs over them and cook over high heat for 2 minutes. Flip the omelette over and cook for another 2 minutes on the other side. Slide the omelette onto a plate and serve hot.
