  1. Wash, scrub and finely grate the carrots. Squeeze the juice out of the lemon.
  2. Season the carrots with the lemon juice, oil and salt and pepper. Mix well and sprinkle with parsley.
  3. You can also add a small, finely chopped white onion and garnish with a few lettuce leaves.

Final Thoughts

Very easy and quick to prepare, and as a bonus it's full of vitamins for winter...but carrots are best from May to October!
