Ingredients
- About 1.7 lbs (800g) carrots, or 6-8 carrots depending on size
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- Salt, pepper
- Parsley, tarragon, herbs according to season
- 1 small white onion
- A few lettuce leaves
Cookware
- 1 vegetable grater

1 lemon squeezer
Preparation
- Wash, scrub and finely grate the carrots. Squeeze the juice out of the lemon.
- Season the carrots with the lemon juice, oil and salt and pepper. Mix well and sprinkle with parsley.
- You can also add a small, finely chopped white onion and garnish with a few lettuce leaves.

Final Thoughts
Very easy and quick to prepare, and as a bonus it's full of vitamins for winter...but carrots are best from May to October!
