Thinly slice the onions. Wash the vegetables. Cut the eggplant and zucchini into cubes. Cut the peppers in half; remove the white skins and seeds then cut into thin strips. Peel the tomatoes if you wish to remove the skin, then remove any excess water and seeds and cut into cubes
Pour 2 tablespoons of olive oil in a large skillet and sauté the onions until they are golden brown. Make sure you do not let them burn!! When finished, crush the garlic with the side of a knife blade and add it to the skillet along with the diced tomatoes, pepper strips and sugar. Season with salt and pepper and simmer uncovered.
During this time, put 4 tablespoons of oil in a saucepan and sauté the zucchini and eggplant. Reduce the heat, cover and simmer.
When the the vegetables are cooked, pour them on top of your tomato mixture
Mix everything together, then let simmer for a few minutes. Sprinkle with parsley before serving
