  1. Prepare the pastry dough: Mix the flour, salt and butter (cut into pieces) together. Add water and knead briskly. Shape into a ball and flatten with the palm of your hand. Fold dough into quarters and let stand in a cool place for about 20 minutes
  2. Preheat the oven to 400°F (200°C)
  3. In a bowl, work together the 3 whole eggs with 1/3 cup (80g) sugar, the vanilla sugar and a pinch of salt until the mixture whitens. Gradually mix in 2/3 cup (80g) flour, then the half liter of cold milk until you obtain a smooth mixture
  4. Cover the baking pan with a thin layer of dough and pour the mixture on top
  5. Place in the oven and cook for 55 minutes to an hour at 400°F (200°C)
  6. Remove from the pan and cool on a wire rack (so that the bottom of the pie does not soften)
  7. Serve cold.
